The Champagne Fairs, between the 12th and 13th centuries, mainly took place around the Saint-Jean-au-Marché Church as well as in the surrounding streets and squares, each specialized in one or more types of trade: second-hand clothing, spices, poultry, cloth, salt trading... In this square, money changers and exchange agents, often Jews or Lombards (from northern Italy), conducted their business. Many of them had been established in Troyes for generations. Nearby, on Rue de la Montée-des-Changes, the Hôtel des Angoiselles was built for a family of Lombard bankers. Merchants from all over Europe brought their own currencies, but at the fairs, only the coins issued by the Counts of Champagne or the King of France were recognized. Equipped with a precision balance, the money changer would weigh the coins, assess their alloy (precious metal content), and calculate their equivalent value. These transactions were taxed and served as a significant source of revenue for the county. With the decline of the fairs in the 14th century, this square was occupied by horticulturists and herbalists (it was then called "Place du Marché-aux-Herbes"), and later by bakers in the 17th century. This is how it gained its current name.
